At the core of The Falls Farm and Mapleton Public House philosophies is connection: connection to nature, connection to each other, and connection within a living ecosystem.
A curated selection of next-generation chefs, each with a connection to The Falls Farm – a regenerative produce farm based in Mapleton – have been invited to generate new ideas based around one key concept: winter produce. These up-and-coming chefs will each be constrained by the same brief: one winter vegetable, protein only allowed as an accompaniment (>10% of the dish), and one course each.
The result will be a lesson in regeneration from a new generation of chefs who care as much about where their food is grown, how it is nurtured, and what becomes of it as they do about how it tastes. Renowned Chef, Cameron Matthews, will mentor them through their culinary creative process to present a four-course degustation that celebrates the power of community, the importance of sustainable agriculture, and the impact of good food on our lives.
$120 for a 4 course degustation w/ matched wine.
